    Strawberry Lemonade

    This strawberry lemonade is light, refreshing and perfect for the hot summer days. Only a few ingredients are needed to make this delicious summery drink which is perfect for BBQs and gatherings.

    As many of my readers probably know, I love strawberries. They’re my favourite fruit and I love to include them in recipes where I can. I also love lemons so this is one of my favourite drinks as it contains both.

    The summer months in the UK have been pretty punishing with the recent heatwaves that have been occurring. I love summer but I don’t enjoy the heatwaves though it does give me an excuse to make nice drinks to cool myself down.

    For this recipe, I use a combination of sugar and sweetener which I do to keep the calories and sugar content down. You will get some sweetness from the strawberries but a little extra sweetness gives the perfect blend of sweet and tangy.

    Ingredients for Strawberry Lemonade

    • Sugar – you can use caster or granulated sugar.
    • Erythritol – I love this sweetener as it doesn’t leave the bad after taste that you get from some sweeteners.
    • Water – cold water to dissolve the sugar.
    • Strawberries – this is the hulled weight.
    • Lemons – the juice is squeezed from fresh lemons.
    • Carbonated water – sparkling water is ideal for a more refreshing taste but you can use plain water instead if you prefer.
    • Ice - to serve.

    How to Make Strawberry Lemonade

    1. To a small saucepan, add the sugar, erythritol and 100ml of water. Place it on a low heat and stir until the sugar has dissolved. This should take around 1 - 2 minutes. Remove from the heat and allow to cool.

    2. Halve the strawberries and place them in a blender. Blitz until you have a smooth puree then put the puree through a strainer over a bowl to remove some of the seeds. Use the back of a spoon to push the puree through the strainer until all the puree has been strained then add the puree to a jug or container and set aside.

    3. Cut the lemons in half and use a citrus squeezer to squeeze all the juice from the lemons then pour the lemon juice into the jug with the strawberries. Pour in the cooled sugar water and the sparkling water then stir until combined. Pour into serving glasses over some ice and enjoy.

    Recipe Tips

    • The recipe makes around 1 litre of strawberry lemonade which contains around 6 servings.
    • I use sugar and sweetener but you can use one or the other.
