    Smoked Salmon and Avocado on Cucumber Slices

    These smoked salmon and avocado on cucumber slices are delicious and filling and perfect if you are following a low carb diet. They are made up of smoked salmon and mashed avocados which is served on cucumber slices. They are super quick to prepare and a great snack to keep your sugar levels low. You can prepare them and take it out with you when on the go and you can have them whipped up in less than 5 minutes.

    Though they are the perfect snack, they can also be served as an appetiser. Nowadays, there are many people who follow a low carb or keto diet so this recipe will have those of your guests that do follow such diets covered. 

    Ingredients for Smoked Salmon and Avocado on Cucumber Slices

    • 140g avocado
    • ½ teaspoon black pepper
    • 1 tablespoon lime or lemon juice
    • 140g smoked salmon
    • 200g cucumber 
    • 140g smoked salmon
    • Dried or fresh chives (for garnish)

    How to Make Smoked Salmon and Avocado on Cucumber Slices

    1. Cut, remove skin and mash the avocado with a fork. Add the black pepper and lime juice and mix them into the avocado. Set aside while you cut the smoke salmon into pieces.

    2. Slice the cucumber into 12 slices and top each slice with 1 teaspoon of mashed avocado then place the smoked salmon on top. Sprinkle on the chives and serve.

    Recipe Tips

    • For the mashed avocado, you can use fresh avocados or ready prepared guacamole.
    • You can garnish the smoked salmon and avocado slices with chives or parsley.

    Storage

    Store these salmon and cucumber slices in the refrigerator and remove 10 minutes before serving. They can last in the refrigerator for up to 2 days dependent on the expiry date of the smoked salmon.
