    Simple Tomato and Cucumber Salad

    This tomato and cucumber salad makes the perfect side salad and uses simple ingredients. The salad is inspired by an Arabic or Persian salad which is why the ingredients are chopped into smaller cubes. The salad is simple, delicious and healthy and best of all, it pairs well with any main dish.

    Tomato cucumber salad

    This salad is so simple and works well as a side for any dish especially grilled food such as grilled chicken or grilled fish. With the summer months fast approaching, the BBQs and garden parties soon will be back so you can serve this dish along with your favourite mains.

    The salad is very low in calories with only 62 calories a serving and it’s also fairly low in carbs. It’s healthy and nutritious and best of all it taste great!

    Ingredients for Simple Tomato and Cucumber Salad

    • Tomatoes – use large vined tomatoes.
    • Cucumber – use English salad cucumber or a large garden cucumber.
    • Onion – use red onion for this recipe.
    • Olive oil – for the dressing.
    • Lemon juice – squeezed from a fresh lemon.
    • Seasoning – to the dressing add salt, black pepper and garlic powder.
    • Parsley – to garnish.

    How to Make Simple Tomato and Cucumber Salad

    1. Wash all the ingredients, using cold water then using a sharp knife, cut the tomatoes into small cubes then place them on a plate lined with kitchen towel. Cut the cucumber into small cubes and place on a separate plate lined with kitchen towel then cut the red onion into small cubes.

    2. To a salad bowl, add the chopped tomatoes, cucumbers, and red onions and toss the salad together. In a small bowl, add and combine the olive oil, lemon juice, salt, black pepper and garlic powder to make the dressing. Pour the dressing onto the salad and toss a few times then garnish with parsley. Serve immediately or refrigerate until needed.

    Recipe Tips

    • When you cut the tomatoes and cucumbers, they will release some water which is why I usually kitchen towel to soak up the water before assembling the salad.
    • Lime also works well in this salad so you can use this instead of lemon if you prefer.
