    Tuna on Cucumber Slices

    Looking for a quick healthy snack then try these tuna on cucumber slices which are a great alternatives to tuna cucumber sandwiches and just as tasty.

    Tuna on cucumber slices

    This snack is delicious and filling and perfect if you are following a low carb diet. It is made up of seasoned tuna salad which is served on cucumber slices. It is super quick to prepare and a great snack to keep your sugar levels low.

    Though these are the perfect snack, they can also be served as an appetiser or as an addition to a low carb lunch. They contain 21 calories and 0.7 grams of carbohydrate per slice so perfect to keep calories and carb levels low. You can also add other vegetables to make them more interesting. Other vegetables you can add to the tuna salad include finely diced red bell peppers, sweetcorn, julienne carrots, chopped celery and chopped avocados.

    Ingredients for Tuna on Cucumber Slices

    • Tuna - I usually use tuna steaks in brine but tuna chunks can also be used.
    • Black pepper - use good quality black pepper to season. 
    • Onion - use chopped red onion.
    • Mayonnaise - I use reduced fat mayonnaise to keep the calories down but use any mayo you prefer.
    • Cucumber - I use a regular English cucumber.
    • Chives - use dried or fresh chives for garnish. 

    How to Make Tuna on Cucumber Slices

    1. Open the tuna, drain and add it to a bowl. Add the black pepper, chopped red onion and mayonnaise. Mix all the ingredients together and set aside.

    2. Slice the cucumber into thick slices. Add a teaspoon of the tuna to each slice and sprinkle on the chives.

    Recipe Tips

    • If you’re taking these tuna cucumber slices to work as a snack, you can store the tuna salad and cucumbers in separate containers and bring a spoon so you can add the tuna to the slices as and when needed.
    • If you used tuna canned in brine then salt will not be needed. You may need some salt to taste if you used tuna canned in oil or spring water.

    Storage

    Store these tuna on cucumber slices in the refrigerator and remove 10 minutes before serving. They can last in the refrigerator for up to 2 days.

    • 120g canned tuna (brined)
    • ½ teaspoon black pepper
    • ½ red onion (chopped)
    • 60g reduced fat mayonnaise
    • ½ cucumber
    • 1 teaspoon chives (for garnish)

    Instructions

    • Open the tuna, drain and add it to a bowl. Add the black pepper, chopped red onion and mayonnaise. Mix all the ingredients together and set aside.
    • Slice the cucumber into thick slices. Add a teaspoon of the tuna to each slice and sprinkle on the chives.
