    Tuna on Cucumber Slices - Snack

    Finding low carb snacks can sometimes be quite tricky but there are definitely many options out there and this delicious snack is one of them. I must admit I do love Tuna and cucumber sandwiches but if you follow a low carb diet then a tuna and cucumber sandwich may not be an ideal choice. Tuna on cucumber slices is a perfect variation to a tuna and cucumber sandwich and just as tasty.

    Tuna on cucumber slices

    This snack is delicious and filling and perfect if you are following a low carb diet. It is made up of seasoned tuna which is served on cucumber slices. It is super quick to prepare and a great snack to keep your sugar levels low. What I love about this quick snack is that you can prepare it and take it out with you when on the go and you can have it whipped up in less than 5 minutes. Though these are the perfect snack, they can also be served as an appetiser or as an addition to a low carb lunch. They contain 21 calories and 0.7 grams of carbohydrate per slice so perfect to keep calories and carb levels low. You can also add other vegetables to make them more interesting.

    Ingredients for Tuna on Cucumber Slices

    • 120g canned tuna steaks
    • ½ teaspoon black pepper
    • ½ red onion (chopped)
    • 60g reduced fat mayonnaise
    • 100g cucumber
    • Dried or fresh chives (for garnish)

    How to Make Tuna on Cucumber Slices

    1. Open the tuna and add it to a bowl. Add the black pepper, chopped red onion and mayonnaise. Mix all the ingredients together and set aside.

    2. Slice the cucumber into 8 slices. Add a teaspoon of the tuna to each slice and sprinkle on the chives.

    Additional Veg You Can Include in The Tuna

    • Julienne carrots
    • Chopped red bell peppers
    • Sweetcorn
    • Chopped green bell peppers
    • Halved cherry tomatoes to decorate
    • Sliced red cabbage
    • Chopped celery
    • Chopped avocados

    Recipe Tips

    • If you’re taking this out or to work as a snack, you can store the tuna and cucumbers in separate containers and bring a spoon so you can add the tuna to the slices as and when needed.
    • If you find onion too much to eat raw, you can always add some chives to the tuna mayo instead. The flavour is similar to onion but a bit more subtle.
    • I use tuna steaks but tuna chunks can also be used.
    • If you used tuna canned in brine then salt will not be needed. You may need some salt to taste if you used tuna canned in oil or spring water.

    Storage

    Store these tuna on cucumber slices in the refrigerator and remove 10 minutes before serving. They can last in the refrigerator for up to 2 days.
