    Prawn Noodle Stir Fry with Sweet Chilli

    This recipe makes a delicious sweet chilli prawn noodle stir fry. The stir fry is made with king prawns, noodles and delicious fresh vegetables.

    If you’re looking for a quick mid-week meal then why not try this gorgeous prawn stir fry. The recipe is super quick and easy so you can have this delicious meal ready in very little time. This recipe is very similar to my vegetable noodle stir fry which is ideal if you’re looking for a vegan version of this recipe.

    The recipe serves around 3 but you can easily double it or triple it to feed a larger family. Making this stir fry is a great way to include lots of healthy vegetables in your meal and you can definitely include other vegetables of choice. The more veg the better!

    Ingredients for Sweet Chilli Prawn Noodle Stir Fry

    • 200g king prawns – also known as shrimp.
    • ½ teaspoon salt – optional.
    • ½ teaspoon black pepper – use good quality black pepper.
    • ¾ teaspoon onion granules – or onion powder.
    • ½ teaspoon paprika – to enhance the flavour.
    • 1 teaspoon sunflower oil – or any oil of choice.
    • 2 teaspoon sesame oil – again, you use any oil of choice.
    • 1 small brown onion – finely chopped.
    • 150g tenderstem broccoli – use can also use regular broccoli if you prefer.
    • 2 medium carrots – peeled and cut into strips.
    • ½ medium red bell peppers – sliced.
    • 120g egg noodles (dry weight) - 300g if using fresh egg noodles.
    • 2 tablespoon sweet chilli sauce – I used reduced sugar sweet chilli sauce but the choice is yours.
    • 1 tablespoon soy sauce – I use reduced salt soy sauce.

    How to Make Sweet Chilli Prawn Noodle Stir Fry

    1. Wash and dry your prawns then season with the salt, black pepper, onion granules and paprika.  Add the sunflower oil to a frying pan and place on a medium heat. Once the oil has heated, add the prawns and cook for around 3 minutes, turning them halfway through.

    2. Use a slotted spoon and remove the prawns from the pan then set them aside. To the same pan, add and heat the sesame oil. Add all the vegetables to the pan at once and stir fry the vegetables for 4 minutes.

    3. If using dry noodles, cook them according to the instructions on the pack, strain them and add them to the pan with vegetables. If using ready prepared noodles then add them directly to the vegetables. Add the sweet chilli sauce and soy sauce then mix everything together. Mix in the prawns then serve immediately.

    Storage

    Any leftovers can be stored in an airtight container and stored in the fridge for up to 2 days.
