    Sautéed Spinach with Tomatoes

    This recipe is for sautéed spinach with tomatoes. The recipe is delicious, quick and can be prepared in under 10 minutes so it’s a perfect contribution towards a quick mid-week meal.

    Sautéed Spinach with Tomatoes

    Previously, I wasn’t a big fan of spinach but would still include it in my diet due to the health benefits. I began experimenting with different ways to prepare spinach to maximise the flavours and came up with this recipe that has now got me loving and looking forward to eating spinach.

    The spinach is cooked in a little oil with onions, garlic and tomatoes with a little seasoning to bring out the flavours. It really is so good and great way to enjoy this nutritious vegetable.

    Spinach is full of essential nutrients that are all important for health. Nutrients found in spinach are but not limited to iron, calcium and magnesium.  

    Enjoy this recipe with fish or chicken with some brown rice or new potatoes for a healthy nutritious meal. If you follow a vegan diet then you can serve this dish with some chickpeas and brown rice.

    Sautéed Spinach with Tomatoes

    Ingredients for Sautéed Spinach with Tomatoes

    • 1 tablespoon coconut oil – you can also use olive or avocado oil.
    • 75g cherry tomatoes – I prefer the flavours from cherry tomatoes but you can use any type of tomatoes.
    • 1 small onion – chopped.
    • 2 garlic cloves – finely chopped.
    • 250g – 300g spinach – I prefer to use baby or young spinach.
    • ¼ teaspoon salt – optional.
    • ¼ teaspoon black pepper – optional.
    • ½ teaspoon garlic granules – optional.
    • ½ teaspoon onion granules - optional.

    How to Make Sautéed Spinach with Tomatoes

    1. Add the cooking oil to a frying pan on a medium heat. Add the onions, garlic and cherry tomatoes then cook for 4 minutes or until the tomatoes are soft.

    2. Mix in the spinach bit by bit and cook until wilted. Season with the salt, black pepper, garlic granules and onion granules then serve.

    Recipe Tips

    • Remember the spinach will significantly reduce down in size once cooked.
    • The salt, black pepper, garlic granules and onion granules are all optional ingredients. They all add extra flavour but the dish will still taste good without them.

    Storage
