    One Avocado Guacamole

    If you only have one avocado in the fridge then you can make this guacamole which serves 2. This guacamole is spicy, tangy and delicious but best of all, it is super quick and easy to prepare.

    One Avocado Guacamole

    Avocados are one of my favourite foods which is why I’m in love with guacamole. Avocados are healthy and contain beneficial nutrients such as omega 6, fibre and many more. They contain good fats or healthy fats as they are sometimes known and making this guacamole will give you all these health benefits.

    What to serve with Guacamole?

    You can serve guacamole with many different foods including party platters and sharing foods. Below is a list of foods to serve with guacamole:

    • Tortilla chips
    • On Tacos
    • In burgers
    • On toast
    • In a sandwich
    • In wraps
    • With crudités
    • On crackers
    • With pitta bread
    One Avocado Guacamole

    Ingredients for One Avocado Guacamole

    • Onion – I use red onion but you can use any onion you prefer.
    • Tomatoes – I use cherry tomatoes.
    • Avocado – use a large ripened avocado.
    • Lime juice – squeezed from a fresh lime.
    • Garlic – fresh raw garlic.
    • Herbs and Seasonings – salt, black pepper, crushed chilli or chilli flakes, coriander.

    How to Make One Avocado Guacamole

    1. Chop the onions into small cubes then cut the cherry tomatoes into quarters and set aside.

    2. Cut the avocado in half around the stone then remove the stone. Using a spoon, scoop out the flesh and add it to a plate. Use a potato masher or fork and mash the avocado to your desired consistency then mix in the lime juice.

    3. Add the chopped onions and tomatoes then grate in the garlic clove. Season with the salt, black pepper and crushed chilli then sprinkle in the chopped coriander. Mix to combine all the ingredients then refrigerate until needed.

    Recipe Tips

    • Ensure you use a ripened avocado
    • If you want the guacamole less spicy then omit the crushed chilli.

    Storage

    • 1 teaspoon coriander or cilantro
