Try these homemade breakfast sausages patties for a delicious breakfast or brunch. I make the sausage patties using pork mince (ground pork) which I season using a selection of herbs and spices. The herbs and spices that I use are what gives the sausages their familiar flavour.

Serve these sausage patties with scrambled eggs or serve them in a English muffin or bagel with an egg for a filling breakfast. You can make the patties thinner so they fit neatly into a sausage egg muffins or bagel.
The recipe is easy to prepare and all the ingredients go into one bowl, before I shape them into patties and bake them until they are golden brown. You can also shape the sausage patties and freeze them until you are ready to cook them. Just throughly defrost them before cooking and they will be just as good as fresh.
Ingredients for Breakfast Sausage Patties
- 500g pork mince 20% fat – also known as ground pork.
- 1 teaspoon salt – this ingredient is optional.
- 1 teaspoon onion granules – or onion powder.
- ½ teaspoon ground nutmeg – vital ingredient in sausages.
- ½ teaspoon black pepper – I use coarse black pepper.
- 1 teaspoon dried sage – or finely chopped fresh sage.
- ½ teaspoon white pepper – works well with the black pepper.
- 1 teaspoon dried parsley – you can also use fresh parsley.
- 1 tablespoon sunflower oil - for greasing baking tray.
How to Make Breakfast Sausage Patties
1. In a large bowl, add the pork mince, salt, onion granules, nutmeg, black pepper, sage, white pepper and parsley. Using your hands, mix all the ingredients in the bowl together making sure you combine the ingredients well.
2. Shape the seasoned meat into 8 burger shaped patties and set aside. Line a baking tray with foil and grease with the sunflower oil then preheat the oven to gas mark 5/375oF/190oC.
3. Place the sausage patties onto the greased baking tray and cook for 30 minutes or until cooked throughout, turning halfway through.
4. Once cooked through, remove from the oven and set aside to cool for 5 minutes before serving.
Recipe Tips
- Pork mince is also known as ground pork in some countries.
- I make my sausage patties quite thick but you can make them thin by putting them between parchment paper and rolling them out thinner.

Storage
Uncooked sausage patties can be stored in the freezer for up to 3 months. Cooked patties can be stored in the fridge for up to 2 days.
