How to Make Peanut Butter Bars
1. Line an 8x8 baking tin with parchment paper and set aside. Crush the digestives biscuits by adding the biscuits to a food bag and rolling over the biscuits in the bag with a rolling pin. You can also do this in a food processor. Once crushed, set aside.
2. To a microwaveable mixing bowl, add the butter and melt in the microwave at 30 second increments. Once melted, mix in the peanut butter until smooth. Mix in the icing sugar then mix in the crushed digestives. Transfer the mixture to lined baking tin and use a palette knife to spread and smooth the mixture in the tin.
3. Add the chocolate and peanut butter to a microwaveable bowl and melt in the microwave at 40 second increments until fully melted. Give the mixture a stir then pour it over the peanut butter base. Use a palette knife to smooth then place in the fridge for 2 hours to set.
