    Chocolate Chip Cookie Bars

    If you love cookies then you will definitely love these chocolate chip cookie bars. They are soft and delicious with a chewy texture that makes them so moreish. Enjoy with a cup of tea or coffee for an easy convenient little treat. 

    Chocolate chip cookie bars

    These chocolate chip cookie bars taste just like a regular chocolate chip cookie but with less work involved. Instead of separating the dough like you would for cookies, you can just bake the batch and cut them into convenient squares which definitely saves times. 

    Ingredients for Chocolate Chip Cookie Bars

    • Butter – I use unsalted butter. Butter should be slightly soft.
    • Sugar – a combination of light brown sugar and granulated.
    • Egg – use 1 medium egg.
    • Vanilla extract – use good quality vanilla.
    • Salt – regular or sea salt.
    • Bicarbonate soda – raising agent.
    • Flour – use plain or all-purpose flour
    • Chocolate chips – use milk or dark chocolate chips.

    How to Make Chocolate Chip Cookie Bars

    1. Preheat the oven to gas mark 3/325oF/165oC and line an 8 inch/20cm square baking tray with baking paper.

    2. Cream the butter and both sugars together until well combined. If using a stand mixer, do this using the paddle attachment. Mix in the egg, vanilla extract, salt and bicarbonate then mix in the flour and chocolate chips.

    3. Add the thick mixture to the lined baking tin and use a palette knife to spread the mixture in the pan. Bake for 30 minutes or until cooked through then place the baking tray onto a cooling rack to allow the cookie bar to cool in the tin. Once cooled cut into 16 bars and enjoy!

    Storage

    • 140g chocolate chips milk or dark
