    Honey glazed butter carrots are the perfect addition to Sunday roasts, holiday dinners or even a weeknight meal. They pair especially well with roast chicken, grilled fish or roast beef, alongside some potatoes.

    • Carrots – use fresh baby carrots or thin whole carrots.
    • Salt – use any type of salt.
    • Water – you’ll need a little water to steam the carrots.
    • Butter – use salted or unsalted butter.
    • Honey – use clear honey or maple syrup if you prefer.
    • Black pepper – a little black pepper to season the carrots.
    • Thyme – use fresh or dried thyme to serve.

    How to Make Honey Glazed Butter Carrots

    1. Place the whole carrots in a large frying pan or skillet with the water and a pinch of salt. Cover with a lid and cook over medium heat for 10 – 12 minutes. Cook until just tender when pierced with a fork.

    2. Remove the carrots and drain any excess water from the pan. Place the pan back on a low to medium heat then add the butter, honey and black pepper. Allow the butter to melt while gently stirring and once the butter starts to sizzle, add the carrots back to the pan.

    3. Cook uncovered on a low heat for another 4 - 5 minutes turning occasionally until the sauce reduces to a sticky lightly browned glaze. Sprinkle with fresh thyme and serve warm.
