Glazed Honey Butter Carrots

Ingredients

  • 450g baby or thin carrots lightly scrapped
  • ½ teaspoon salt
  • 60ml water to steam
  • 40g butter
  • tablespoon honey or maple syrup
  • ¼ teaspoon black pepper
  • 1 teaspoon thyme for garnish

Instructions

  • Place the whole carrots in a large frying pan or skillet with the water and a pinch of salt. Cover with a lid and cook over medium heat for 10 – 12 minutes. Cook until just tender when pierced with a fork.
  • Remove the carrots and drain any excess water from the pan. Place the pan back on a low to medium heat then add the butter, honey and black pepper. Allow the butter to melt while gently stirring and once the butter starts to sizzle, add the carrots back to the pan.
  • Cook uncovered on a low heat for another 4 - 5 minutes turning occasionally until the sauce reduces to a sticky lightly browned glaze. Sprinkle with fresh thyme and serve warm.
