    White Chocolate Fruit Crunch Bars

    If you're looking for a quick after dinner treat then try these easy white chocolate crunch bars. They are made with melted white chocolate, chopped cranberries and chopped nuts which all taste so good together.

    White Chocolate Fruit Crunch Bars

    When I need a crunchy after dinner treat this is one of my go to recipes because their quick, easy and there is no baking involved. I make this recipe in an 8-inch dish or tin and cut it into 16 squares which only contain 128 calories so you can enjoy these little treats without consuming too many calories.

    Ingredients for White Chocolate Fruit Crunch Bars

    • White chocolate – use a good quality white chocolate bar.
    • Rice Krispies – used to gives the bars a crunchy texture.
    • Cranberries – use dried cranberries to give the bars a chewy texture.
    • Nuts – you can use any nuts of choice. I sometimes use chopped walnuts, pecans, or hazelnut.

    How to Make White Chocolate Fruit Crunch Bars

    1. Line an 8-inch square baking tin with parchment paper and ensure you leave some overhang. Set the tin aside.

    2. To a microwavable bowl, add the white chocolate and melt at 40 second increments in the microwave until fully melted. Mix in the rice krispies, dried cranberries and nuts and use your spatula to crush some of the rice krispies.

    3. Tip the mixture into the tin and use a palette knife to spread the mixture and press into the pan. Place the pan in the fridge to allow the bars to for set for 2 hours. Remove the bars from the fridge and cut into 16 squares. This is easily done by cutting into 4 equal pieces then cutting each quarter into another 4.

    Recipe Tips

    • Though I use white chocolate for this recipe, it also tastes good with dark or milk chocolate.
    • This recipe is adaptable so you can omit the nuts from the recipe if you don’t eat them.
    • If you can’t get dried cranberries then you can use raisins or dried blueberries.

    Storage

    You can store these bars in an airtight container at room temperature. If you prefer, you can store them in the fridge and they can keep up to a week.
