- Chicken - I use boneless skinless chicken thighs.
- Seasonings – you’ll need salt, black pepper, garlic powder, onion powder and chilli flakes.
- Limes – you’ll need the juice and zest from the limes for the marinade.
- Olive oil – or any oil you prefer.
- Honey – use honey to slightly sweeten the flavours.
- Coriander – use fresh coriander also known as cilantro.
- Garlic – use fresh garlic cloves.
How to Make Lime Coriander (Cilantro) Boneless Chicken Thighs
1. Add the chicken thighs to a bowl then season with salt, black pepper, garlic powder, onion powder and chilli flakes. Set the bowl aside. In another bowl, whisk together the lime juice, lime zest, olive oil, honey, cilantro and minced garlic.
2. Pour the marinade onto the chicken and coat well. Cover and let marinate for at least 30 minutes (up to 2 hours for deeper flavour).
3. Preheat grill to medium-high. Cook thighs for 14 minutes turning halfway through. Cook until slightly charred and cooked through. Serve and garnish with extra fresh cilantro and lime wedges.
Recipe Tips
- To pan-fry, heat a little oil in a skillet and cook thighs 7 - 8 minutes per side until golden, juicy and cooked through.
- To cook in the oven, bake at gas mark 6/200°C/400°F for 20–25 minutes until cooked through.
