    Lime Coriander (Cilantro) Boneless Chicken Thighs

    This lime coriander chicken recipe makes chicken with great flavours which are all well balanced. The lime juice and zest add a sharp citrus flavour which complement the vibrant herby flavour of the fresh coriander (cilantro). The garlic and chilli flakes add depth and a subtle heat while the olive oil and honey balance the acidity and lock in juiciness.

    Why Chicken Thighs?

    Boneless chicken thighs are a great choice because they stay moist and flavourful during cooking unlike chicken breast which can dry out quickly. Chicken thighs hold onto marinades beautifully and deliver a juicy bite every time. Boneless thighs cook in less time than thigh on the bone and can easily be added to salads for a healthy delicious meal.

    How to Serve Lime Coriander (Cilantro) Boneless Chicken Thighs

    • Serve with coconut rice or herbed quinoa with some veg for a balanced meal.
    • Slice and add to tacos with avocado, salsa or soured cream.
    • Add to chicken wraps with some salad and hot sauce.
    • For a lighter option, pair with a crisp green salad.

    Ingredients for Lime Coriander Chicken (Lime Cilantro Chicken)

    • Chicken - I use boneless skinless chicken thighs.
    • Seasonings – you’ll need salt, black pepper, garlic powder, onion powder and chilli flakes.
    • Limes – you’ll need the juice and zest from the limes for the marinade.
    • Olive oil – or any oil you prefer.
    • Honey – use honey to slightly sweeten the flavours.
    • Coriander – use fresh coriander also known as cilantro.
    • Garlic – use fresh garlic cloves.

    How to Make Lime Coriander (Cilantro) Boneless Chicken Thighs

    1. Add the chicken thighs to a bowl then season with salt, black pepper, garlic powder, onion powder and chilli flakes. Set the bowl aside. In another bowl, whisk together the lime juice, lime zest, olive oil, honey, cilantro and minced garlic.

    2. Pour the marinade onto the chicken and coat well. Cover and let marinate for at least 30 minutes (up to 2 hours for deeper flavour).

    3. Preheat grill to medium-high. Cook thighs for 14 minutes turning halfway through. Cook until slightly charred and cooked through. Serve and garnish with extra fresh cilantro and lime wedges.

    Recipe Tips

    • To pan-fry, heat a little oil in a skillet and cook thighs 7 - 8 minutes per side until golden, juicy and cooked through.
    • To cook in the oven, bake at gas mark 6/200°C/400°F for 20–25 minutes until cooked through.

    Storage
