- 5 - 6 boneless skinless chicken thighs
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic granules/powder
- 1 teaspoon onion granules/powder
- 1 teaspoon chilli flakes
- 2 limes juice and zest
- 2 tablespoon olive oil
- 1 tablespoon honey
- 2 tablespoon fresh cilantro/coriander chopped
- 2 cloved fresh garlic chopped
Add the chicken thighs to a bowl then season with salt, black pepper, garlic powder, onion powder and chilli flakes. Set the bowl aside. In another bowl, whisk together the lime juice, lime zest, olive oil, honey, cilantro and minced garlic.
Pour the marinade onto the chicken and coat well. Cover and let marinate for at least 30 minutes (up to 2 hours for deeper flavour).
Preheat grill to medium-high. Cook thighs for 14 minutes turning halfway through. Cook until slightly charred and cooked through. Serve and garnish with extra fresh cilantro and lime wedges.
