    Chocolate Cornflake Squares (No Bake)

    This recipe makes chocolate cornflakes squares that are so simple and easy to make. They require minimal work and there is no baking involved. This is my go-to recipe when I need something quick, chocolatey and crunchy.

    I previously bought chocolate cornflake bites in the supermarket but recently decided to start making my own and I don’t think I will go back to shop bought.

    I use a mixture of milk and dark chocolate which I find prevents the cornflake squares from being too sweet. Most cornflakes cereals are fortified so you can also get some nutrients into your sweet treats.

    If you have kids, they will definitely love this recipe and they will enjoy getting involved to make the recipe. My daughter who is now 5 loves to help me in the kitchen and simple recipes like this are perfect.

    We enjoy these crunchy treats as an afternoon snack or as a after dinner treat but they're perfect for any time of day. If you ever want to whip up a sweet treat in less than 10 minutes then this is the perfect recipe.

    Ingredients for Chocolate Cornflakes

    Please find the full list of ingredients and quantities in the recipe card at the end of the post. 

    • Cornflakes - for this chocolate cornflakes recipe, use any brand of cornflakes just don't use frosted flakes.
    • Butter - I use unsalted butter (soft at room temperature).
    • Chocolate - I use a mixture of milk chocolate and dark chocolate.
    • Sea salt - optionally, you can sprinkle on some sea salt flakes for extra flavour.

    How to Make Chocolate Cornflakes

    1. Line an 20 x 20 cm (8 x 8 inch) baking tin with parchment paper with enough parchment to hang over the edges of the tin. Set the tin aside. Add the cornflakes to a large bowl and using your hands, crush the cornflakes into smaller pieces. Also set aside.

    2. Add some water to a medium saucepan and place on a high heat. Allow the water to begin boiling then reduce to a low heat. Place a heat proof bowl over the saucepan ensuring the bottom of the bowl isn’t touching the water. If the bottom of the bowl is touching the water then carefully remove some of the water. To the bowl, add the butter, milk chocolate and dark chocolate then gently stir until melted. You can also melt in the microwave.

    3. Once melted, remove the bowl from the saucepan and pour the cornflakes into the bowl and stir until all the cornflakes are coated in chocolate. As you’re stirring, crush the cornflakes into the chocolate to make the cornflake pieces even smaller.

    4. Once all the cornflakes are coated, tip the mixture into the tin and use a spatula to press and smooth it out. Press the mixture tightly into the tin and corners. Place the chocolate cornflakes in the fridge for 2 hours then remove from the tin using the parchment paper overhang. Cut into 16 squares by cutting the whole thing into 4 pieces then cutting each piece into 4 again. Optionally, sprinkle with sea salt flakes.

    Recipe Tips

    • For this recipe, I use an 20 x 20 cm (8 x 8 inch) baking tin.
    • I use a mixture of milk and dark chocolate but you can use all dark chocolate or all milk chocolate.
    • Remove the butter from the fridge a few hours before making this recipe. This isn’t essentially but it helps the butter to melt into the chocolate easier.

    Storage

    Store these chocolate cornflake squares in an airtight container and store them in the fridge. Serve directly from the fridge and consume them within a week.

    Ingredients

    • 200g cornflakes
    • 60g unsalted butter (soft at room temperature)
    • 200g milk chocolate (chopped)
    • 100g dark chocolate (chopped)
    • 1 teaspoon sea salt (optional)

    • Line an 20 x 20 cm (8 x 8 inch) baking tin with parchment paper with enough parchment to hang over the edges of the tin. Set the tin aside. Add the cornflakes to a large bowl and using your hands, crush the cornflakes into smaller pieces. Also set aside.
