    Simple Avocado Salad with Lemon Dressing

    This recipe is for a simple avocado salad that is perfect as a side dish. The salad is served with a lemon dressing that complements it well. Serve it with your favourite main and side for a healthy balanced meal.

    Simple Avocado Salad

    One of the things I love about this salad is how colourful it is. The mix of colours are so pretty and the best thing is that it tastes as good as it looks.

    As well as avocado, this salad contains a mixture of vegetables including chopped cucumbers, red onion, cherry tomatoes and sliced yellow bell peppers. It is nutritious with a range of healthy nutrients including healthy fats. It is drizzled in a delicious lemon dressing that gives the salad a tangy zesty flavour.

    This healthy salad is filling and will pair well with any meal you serve. If you’re following a low carb diet, you can serve this salad with some baked chicken or fish. If you’re not eating low carb then serve with any meat along with pasta, potatoes or rice. This avocado salad recipe is also vegan friendly and gluten free so whatever way you eat, this salad will fit into your diet.

    Ingredients for Avocado Salad with Lemon Dressing

    For the salad

    • Cucumber - I use English cucumbers.
    • Onion - use a red onion.
    • Tomatoes - cherry tomatoes are my favourites but you can use regular tomatoes.
    • Avocado - use a ripened avocado.
    • Bell pepper - use yellow bell pepper or red bell pepper.

    For the dressing

    • Lemon juice - squeezed from a fresh lemon.
    • Vinegar - use white wine vinegar or red wine vinegar.
    • Oil - use extra virgin olive oil.
    • Herbs and seasonings - oregano, parsley, salt and black pepper.

    How to Make Avocado Salad with Lemon Dressing

    1. Mix all the dressing ingredients together in a small jar, cover and refrigerate until needed.

    2. Add all the salad ingredients to a large bowl, toss them all together then refrigerate until needed.

    3. When you are ready to serve the salad, pour on the dressing.

    Ingredients

    For the dressing

    • ½ lemon juiced
    • 10ml white wine vinegar
    • 15ml extra virgin olive oil
    • ½ teaspoon dried oregano
    • ½ teaspoon dried parsley
    • ¼ teaspoon salt
    • ¼ teaspoon pepper

    For the salad

    • 110g cucumber diced
    • ½ red onion sliced
    • 80g cherry tomatoes halved
    • 1 large avocado diced
    • ½ yellow bell pepper sliced

    Instructions

    • Mix all the dressing ingredients together in a small jar, cover and refrigerate until needed.
    • Add all the salad ingredients to a large bowl, toss them all together then refrigerate until needed.
    • When you are ready to serve the salad, pour on the dressing.

      I made this salad today but left out the peppers as I don’t like peppers, it was still delicious. I served it with grilled chicken.
