Simple Tomato and Cucumber Salad

This salad is inspired by an Arabic or Persian salad which is why the ingredients are chopped into smaller cubes. The salad is simple, delicious and healthy and best of all pairs well with any main dish.

Ingredients

  • 4 large fresh tomatoes
  • ½ large cucumber
  • ½ large red onion
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon parsley chopped

Instructions

  • Wash all the ingredients, using cold water then using a sharp knife, cut the tomatoes into small cubes then place them on a plate lined with kitchen towel. Cut the cucumber into small cubes and place on a separate plate lined with kitchen towel then cut the red onion into small cubes.
  • To a salad bowl, add the chopped tomatoes, cucumbers, and red onions and toss the salad together. In a small bowl, add and combine the olive oil, lemon juice, salt, black pepper and garlic powder to make the dressing. Pour the dressing onto the salad and toss a few times then garnish with parsley. Serve immediately or refrigerate until needed.
