Ingredients

  • 750g chicken wings
  • 1 teaspoon salt optional
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon crushed chilli
  • 3 teaspoon garlic finely chopped
  • 1 tablespoon parsley finely chopped
  • 1 teaspoon soy sauce reduced salt
  • 1 tablespoon extra virgin olive oil
  • 60g unsalted butter
  • 60g parmesan grated

Instructions

  • To the cleaned wings, sprinkle on the salt, black pepper, paprika and crushed chilli. Add in the chopped garlic and parsley then set the bowl aside. To a smaller bowl, add the soy sauce and olive oil then mix. Pour the liquid onto the chicken and seasoning then using a spoon mix everything together. Cover and refrigerate for around 4 hours but preferably overnight.
  • When you’re ready to cook the wings, preheat the oven to gas mark 6/400oF/200oC. While the oven is heating, line a baking tray with parchment paper or foil and place the wings on the tray and ensure there is space between them. Place in the oven for 30 minutes. While they are in the oven, melt the butter in a microwaveable bowl at small increments of 20 seconds until fully melted. To the melted butter, pour in the parmesan and combine them set aside.
  • After 30 minutes, remove the wings from the oven and place each wing into bowl with the butter and parmesan. Mix all the wings into the sauce until all the wings are coated then pour the content of the bowl back into the baking tray. Spread the wings out again and then bake for another 15 to 20 minutes depending on the size of the wings. Once baked, allow the wings to cool for 10 minutes before serving.
