    Left Over Roast Chicken Tacos

    These chicken tacos are honestly so good and this is the perfect recipe to use leftover roast chicken. The recipe is quick and easy with hardly any work involved.

    How many times have you roasted a whole chicken and ended up with a ton of leftover chicken and you just don’t know what to do with it?  Well, this recipe is perfect for those times. This is a simple recipe that doesn't involve much cooking and the recipe just involves assembling the tacos.

    There are many things that you can do with left over roast chicken including chicken salad, chicken chow mien, chicken sandwiches and much more but if you're looking for something different then give this recipe a try. This leftover roast chicken taco recipe makes tacos that are cheesy with a little spice so they're similar to chicken quesadillas. Serve them with some salsa, sour cream, guacamole or some hot sauce for a easy tasty meal.

    Ingredients for Left Over Roast Chicken Tacos

    Please find the full list of ingredients and quantities in the recipe card at the end of the post. 

    • Tortillas - I use mini tortilla wraps.
    • Cheese - grated mozzarella or mild cheddar cheese is best as they both melt well.
    • Chicken - use leftover cooked roast chicken.
    • Hot sauce - I use Cholula Original Hot Sauce
    • Lime juice - squeezed from a fresh lime.
    • Onion - use a red onion.
    • Coriander - also known as cilantro.

    How to Make Left Over Roast Chicken Tacos

    1. Place a non frying pan on a low to medium heat and lightly grease. Place a tortilla in the pan then sprinkle some of the mozzarella onto the tortilla to cover the whole surface. As the cheese begins melt, sprinkle on the chopped chicken and allow to heat with the cheese. Ensure the heat is not too high or the tortilla will burn.

    2. Pour a teaspoon of the hot sauce onto the chicken, then 1 teaspoon of the lime juice. Sprinkle on some chopped red onion and sprinkle on some coriander then use a spatula to fold the tortilla. Remove the tortilla with the spatula then repeat the process to make the second taco. Serve with your favourite dip.

    Recipe Tips

    • This recipe is very adaptable so you can add some of your favourite ingredients or ingredients you have laying around in your fridge to make them more interesting. You can also add sweetcorn.
    • This recipe makes two taco but serves one.

    • 100g cooked roast chicken (chopped)
    • 2 teaspoon hot sauce
    • 2 teaspoon lime juice (squeezed from a fresh lime)
    • ½ small red onion (chopped)
    • 2 teaspoon coriander/cilantro (chopped)
