Sautéed Spinach with Tomatoes

This recipe is for sautéed spinach with tomatoes. The recipe is delicious, quick and can be prepared in under 10 minutes so it’s a perfect contribution towards a quick mid-week meal.

Ingredients

  • 1 tablespoon coconut oil
  • 75g cherry tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 250g - 300g raw young spinach
  • ¼ teaspoon salt optional
  • ¼ teaspoon black pepper optional
  • ½ teaspoon garlic granules optional
  • ½ teaspoon garlic granules optional

Instructions

  • Add the cooking oil to a frying pan on a medium heat. Add the onions, garlic and cherry tomatoes then cook for 4 minutes or until the tomatoes are soft.
  • Mix in the spinach bit by bit and cook until wilted. Season with the salt, black pepper, garlic granules and onion granules then serve.
