Chilli and Ginger Prawn Fritters

These king prawn fritters are spicy and delicious, They are made with ginger, chilli, carrots and spring onions and the combinations of these flavours create a yummy healthy treat.

Ingredients

  • 235g king Prawns raw
  • 1 teaspoon crushed chilli
  • 3 spring onions finely chopped
  • 1 small piece of ginger grated
  • ½ teaspoon garlic purée
  • 1 small carrot grated
  • 2 tablespoon plain flour
  • 1 medium egg
  • 1 tablespoon lime juice from a fresh lime
  • Salt to taste
  • Black pepper to taste
  • 15ml coconut oil

Instructions

  • Finely cut your prawns into small pieces then add them to a bowl along with the dried crushed chilli, spring onions, ginger, garlic puree and grated carrots.
  • In another small bowl mix together the flour, egg and lime juice. Once combined pour it onto the prawns and mix well. Add salt and black pepper if using and mix again.
  • Heat a frying pan with 2 tablespoon of oil on a medium heat, once heated add a tablespoon of the mixture to the pan and press flat. If you have space, you can cook a few at once.
  • Cook for 3 minutes then turn the fritters over and cook for another 3 minutes. Remove them from the pan and repeat this process until all the fritter mixture is used up.
  • Once cooled, they can be served immediately.
