Steak Salad with Dijon Mustard Dressing

This recipe makes a delicious summery steak salad with a homemade Dijon mustard dressing.

Ingredients

For the dressing

  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dijon mustard
  • Salt to taste
  • Pepper to taste

For the steaks

  • 2 medium sirloin steaks
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoon extra virgin olive oil

For the salad

  • 80g salad leaves
  • 1 medium avocado sliced
  • ½ medium red onion sliced
  • 120g cherry tomatoes whole or halved
  • 90g cucumbers sliced

Instructions

  • In a small bowl, mix together all the ingredients for the dressing and then refrigerate.
  • Dry the steak by patting them with paper towels then season by sprinkling on the salt, black pepper, garlic powder and onion powder. Brush both sides of the steaks with olive oil and set aside.
  • Heat a non-stick frying pan or skillet on a high heat then add 1 tablespoon olive oil. Cook for 2 minutes then turn the steaks over and cook for a further 2 minutes. For well done steak, cook for 4 minutes each side. Remove the steaks from the pan and set aside while you make the salad.
  • Toss together all the salad ingredients and add them to the serving bowls. Slice the steaks and add them to the salads. Drizzle some of the dressing on top and serve.
