Ham Spinach & Cheese Omelette

- 1 teaspoon cooking oil
- ½ red bell pepper sliced
- ½ red onion sliced
- 40g young spinach
- 2 medium eggs
- 1 tablespoon single cream or milk
- 1 pinch salt
- 1 pinch black pepper
- 10g butter
- 15g cheddar cheese grated
- 50g thinly sliced ham
- ½ teaspoon chives
Heat the oil in a medium sized non-stick frying pan over a low - medium heat. Add the red pepper and onions then cook for 2–3 minutes until softened. Add in the spinach and cook until wilted. Transfer to a plate and set aside.
Beat the eggs in a bowl with the single cream, salt and black pepper until well combined. Add the butter to the same pan and place the pan on a medium heat. Pour in the eggs and swirl to coat the base. Allow it to cook gently until almost set.
To one half of the omelette, sprinkle on the cheese and spread the ham. Top with the red peppers, onions and spinach mixture then fold the omelette over and cook for another 2 - 3 minutes until set. Garnish with chives then slide onto a plate and enjoy hot.
