Chicken Chow Mein

Looking for a quick and tasty meal then why not tuck in this delicious chicken chow mein which you can make in around 35 minutes. The chow mein includes marinated baked chicken, vegetables and noodles with a delicious chow mein sauce and will probably be quicker to prepare than to order a takeaway.

Ingredients

Chicken and Marinade

  • 1 medium chicken breast fillet (uncooked)
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon white pepper

Chow Mein Sauce

  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon light brown sugar
  • 1 teaspoon sesame oil

Chow Mein Stir Fry

  • 125g noodles (uncooked) or around 275g (cooked)
  • 1 tablespoon sunflower oil
  • 120g beansprouts
  • ½ medium onion sliced

Garnish

  • 1 chopped spring onion optional

Instructions

  • Firstly, make the marinade by adding the garlic paste, ginger paste, soy sauce, sesame oil and white pepper to a small bowl then mix the ingredients together. Add the whole chicken breast to the marinade and fully coat the chicken in the marinade. Allow to rest for 20 minutes while you preheat the oven to gas mark 6/400oF/200oC.
  • After 20 minutes, place the marinated chicken on a baking tray and bake in the oven for 25 minutes. Remove from the oven, allow the chicken to cool then slice the chicken into small pieces and set aside. To make the chow mein sauce, add the oyster sauce, soy sauce, light brown sugar and sesame oil to a small bowl then mix and set aside.
  • Place a pot of water on a high heat and bring to a boil. Once the water is boiling add the noodles and cook or soak according to the package instructions. Strain the noodles, rinse with cold water then set aside.  Skip this step if using ready cooked noodles.
  • To a heavy duty pan or wok, add the sunflower oil and allow to heat on a high heat. Once the oil is slightly sizzling, add the beansprouts and chopped onions and stir fry for around 2 minutes. After 2 minutes, add in the cooked noodles and cooked chicken and mix everything together. Cook for a further 1 minute then add in the chow mein sauce and combine well. Remove from the heat and serve immediately. Garnish with chopped spring onions.
